In a bowl, mix 3-4 tbsp. of sifted flour, crumbled yeast, and sugar. Pour in 100 ml of warm water and let the yeast activate.
Combine yogurt with warm milk, remaining warm water, and salt, stirring until homogeneous.
Beat 1 egg with 1 egg white (reserve yolk for brushing). Once yeast is activated, add oil, milk mixture, and beaten eggs, then gradually add sifted flour to form a soft dough.
Roll out the dough on a lightly oiled surface, brush with 1 tbsp. of oil, fold, and knead until the fat is absorbed. Repeat with remaining oil.
Divide the risen dough into 4 equal parts, roll each into thin sheets, sprinkle with cheese, and drizzle with melted fat. Roll and shape into snails.
Place in a preheated oven at 180°C and bake for about 55 minutes, covering with foil if it browns too quickly.
