Ingredients
  • zucchini
  • water or vegetable broth
  • onion
  • carrot
  • oil or butter
  • rice (optional)
  • salt
  • black pepper
  • dill
  • yogurt (optional)
  • egg (optional)
Preparation
  1. Chop the onion, carrot, and zucchini into small cubes.
  2. Heat the oil and sauté the onion and carrot for 2-3 minutes.
  3. Add the zucchini and stir briefly.
  4. Pour in the water or broth and bring to a boil.
  5. If desired, add the rice and cook until tender (about 15 minutes).
  6. Season with salt and black pepper.
  7. Optionally, stir in beaten egg and yogurt, sprinkle with chopped dill, and serve.
