Ingredients
  • potatoes – 2 pcs
  • carrot – 1 pc
  • zucchini – 1 pc
  • onion – 1 pc
  • garlic – 2 cloves
  • olive oil – 1 tbsp
  • vegetable broth – 800 ml
  • salt – 1/2 tsp
  • black pepper – 1/2 tsp
  • parsley – 1 tbsp
Preparation
  1. Peel and chop all vegetables.
  2. Sauté the onion and garlic lightly in olive oil.
  3. Add the remaining vegetables.
  4. Pour in the broth.
  5. Simmer until tender.
  6. Season with salt and pepper.
  7. Optionally blend or leave in chunks.
  8. Garnish with parsley.
  9. Serve warm.
