Preparation
Boil the eggs (about 10 minutes), peel them and cut into cubes.
Peel the avocado and either chop it or mash it lightly.
In a bowl, combine the eggs and avocado.
Add yogurt or mayonnaise.
Drizzle with lemon juice.
Add chopped green onion and parsley.
Season with salt and pepper, mix gently and serve.
