Raw Vegan Cake with Berries

Ingredients
  • 300g pitted dates
  • 150g coconut oil
  • 50g carob flour
  • 160g hazelnuts
  • 400g mixed berries
  • 150g cashews
  • fresh fruits for decoration
  • or flowers
  • seeds
Preparation
  1. For the base, finely grind the hazelnuts with carob flour in a food processor. Add 100g of dates and 50g of coconut oil. Blend until sticky and pliable.
  2. Spread the mixture at the bottom of a 20cm cake ring, smooth it with a spoon, and refrigerate to set.
  3. Soak the cashews in water the day before, or for an hour in hot water if not planned. Blend the berries with the drained cashews, then add the remaining dates and finally the coconut oil.
  4. Blend until smooth. Ingredients for the cream should be at room temperature to prevent the coconut oil from hardening.
  5. Pour the cream over the base and refrigerate for 5-6 hours. Decorate with edible flowers, fresh fruits, nuts, and others as desired.
