Preparation
Wash the chicken and boil it with one chopped onion.
After about 20 minutes, remove the chicken, debone it, and cut it into small pieces, reserving the broth.
Chop the onion, carrot, celery, and pepper into small cubes, then sauté them in a pot with preheated oil.
Add the diced potatoes and chicken to the pot and pour in the chicken broth.
After 10-15 minutes, add the rice and season with salt, black pepper, thyme, and oregano.
Once the rice is cooked, remove from heat and temper the soup. For the tempering: Mix and whisk the egg, yogurt, and vinegar well.
