Chocolate Aphrodisiac Cake

Ingredients
  • For the base:
  • 180g flour
  • 120g sugar
  • 100g brown sugar
  • 60g cocoa powder
  • 8g baking soda
  • 8g baking powder
  • a pinch of salt
  • 2 eggs at room temperature
  • 140ml thick yogurt
  • 75ml oil
  • 140ml fresh
  • hot coffee
  • For the cream:
  • 200g dark chocolate
  • 200g milk chocolate
  • 400ml heavy cream
  • 3 egg yolks
  • 3 egg whites
Preparation
  1. Preheat the oven to 180°C. In a deep bowl, mix flour, both sugars, cocoa, baking soda, baking powder, and salt.
  2. Combine eggs, oil, and yogurt, then add to the dry ingredients. Mix well, then pour in the hot coffee and stir until smooth.
  3. Pour the mixture into a greased and cocoa-dusted cake pan and bake for 40-45 minutes. Let cool completely before cutting into 3 equal layers.
  4. Chop the chocolates and heat the cream until boiling. Pour over the chocolate and let sit for a minute before stirring until smooth.
  5. Whisk egg yolks in a water bath and mix into the warm ganache. Chill until thick, then fold in whipped egg whites gently.
  6. Refrigerate for 30-40 minutes until set and easy to spread.
