Preparation
In a bowl, mix all ingredients except for the flour and leavening agents. You can use a mixer to better dissolve the sugar.
Sift the flour with baking powder and baking soda, then gradually add it to the liquid mixture. Do not be misled by the consistency of the dough; do not add more flour.
The dough should be thick and sticky. Cover the bowl with a lid or wrap it in foil and refrigerate for at least an hour.
During this time, place the powdered sugar in a convenient bowl, line a baking tray with parchment paper, and preheat the oven to 180 degrees.
Remove the chilled dough, which should no longer be sticky, tear off pieces and shape them into balls the size of a walnut. Roll them well in the powdered sugar and arrange them spaced apart on the tray.
Bake the cookies for about 10-12 minutes. Cool on a wire rack. This batch yields about 50 cracked honey cookies.
