Ingredients
  • 1 cup rice
  • 500 g spinach (can use chard
  • sorrel
  • or a combination of all three)
  • 2 bunches green onions
  • 1 carrot
  • 2 eggs
  • 200 g cheese
  • 3 cups homemade vegetable broth
  • salt
  • pepper
  • yogurt (for serving)
Preparation
  1. In a pan, sauté the green onions and add the spinach and grated carrot until fully wilted.
  2. Add the rice with a 1:3 ratio of water (it becomes much tastier with homemade vegetable broth).
  3. Once cooked, add the eggs and cheese.
  4. Season to taste with salt and pepper.
  5. Serve with yogurt.
