or a combination of all three)

2 bunches green onions

1 carrot

2 eggs

200 g cheese

3 cups homemade vegetable broth

salt

pepper

yogurt (for serving)
Preparation
In a pan, sauté the green onions and add the spinach and grated carrot until fully wilted.
Add the rice with a 1:3 ratio of water (it becomes much tastier with homemade vegetable broth).
Once cooked, add the eggs and cheese.
Season to taste with salt and pepper.
Serve with yogurt.
